Lentil Walnut Potsticker Filling
A lot of my cravings are for a certain flavor, sweet, salty, sour etc. I almost never crave a specific dish. Although, every once in a while, I get the urge to have Chinese food. Not actual Chinese food, but the questionable, not at all good for you stuff that I was allowed to have as a treat when I was a child. I want lo mein or chow mein or General Tso’s or egg rolls or, more often than not, I want potstickers. It may be the only actual food item I really crave (and french fries… oh french fries). I have made a decent gluten free dough, but my fillings always left me a little disappointed. I mean the vegetable fillings were good I just wanted it to feel more substantial. This filling satisfied my craving for that savory umami I remember.
1 cup cooked lentils 1 cup toasted walnuts 1 tbsp chives 1 tbsp minced ginger 1 tbsp rice vinegar 1/2 tbsp chili oil 2 tbsp soy sauce
- Add the walnut to a food processor and pulse a few times until they are just broken up (I have also done this in a blender and did something similar with a gallon ziplock bag and crushed it with a pan… don’t ask….).
- Add the other ingredients and pulse to combine (or get your anger out with that ziplock).
That’s it! I used tbsp scoops and it made 18 dumplings 🙂 Enjoy!
