Cuban Style Jackfruit

Scott used to make this Cuban style pork that I was one of the only ways I used to eat the stuff. This recipe leaves you with something that tastes almost entirely identical! The reason why jackfruit is so popular is that it really gives that meat-like feel and takes on the flavors of marinades and sauces so well. It’s definitely worth trying out!

Ingredients:

1 can of jackfruit (drained)

1/2 cup OJ1 cup veggie stock, zest and juice of 1 lime, 1 cup of sliced jalapeños, 1 cup of cilantro, 1 tbsp of cumin, and 1/2 tbsp of oregano

Method:

Just toss it all in the crockpot and let it go until it’s easily broken apart with a fork. I cooked mine on high for about 6 hours. Don’t worry, the longer you let it go the better it will taste!
