These baked zucchini fries are super easy and get for a party. You can serve them with whatever dipping sauce you like. They are definitely a crowd pleaser because they are crispy and crunchy and the veggie flavor is super mild. This recipe also doubles and triples well if you have a big crowd. Enjoy!
1 large zucchini cut into fries 2 tbsp flax seed mixed with 6 tbsp of water 1/2 cup mylk 2 cups of bread crumbs (you can combine half almond and meal half bread crumbs as well) 2 tbsp of Italian seasoning (or whatever seasoning mix you like)
Preheat the oven to 425F. Combine flax “eggs” (the flax seed and water mixture) with the mylk (whatever kind of milk you want to use here will be just fine) and place in a bowl.

Combine the breadcrumbs and seasoning and place in another bowl.
Coat the zucchini fries in the flax mixture and then transfer it to your breadcrumb bowl and coat it with breadcrumbs.
Place the breaded fry onto a parchment lined baking sheet and bake them for 20 min.
