Treat Yo Self Soup

This is definitely for a day when you need to feel spoiled. It’s super rich and creamy and perfect for the colder months. It is seriously worth it!

Ingredients

2 cups roasted delicata

1 cup steamed cauliflower

1/2 veggie stock

8oz vegan cream cheese

1 1/2 cup nut milk

1 tbsp thyme

Salt to taste

Method

1. Roast the squash (just cut in half flesh, side down) at 350F for about twenty minutes. I would suggest using parchment paper and rubbing some avocado oil on the flesh side. 2. Steam the cauliflower and add the thyme. 3. Add the squash, cauliflower and cream cheese to a food processor and begin to combine.4. While the food processor is running stream in the almond milk and the stock5. Stop the food processor, scrape down the sides and add salt. 6. Pulse and season as necessary 7. Pour the mixture into a medium sauce and heat on medium low heat until warmed through
