Cinnamon Granola

Cinnamon Granola

Granola is one of my favorite snacky and breakfast things. I added some almonds and pumpkin seeds for some additional protein and fat. You can add whatever you like, though. Coconut would be tasty! Why not have it all?!? And if you pair this with my super simple cream cheese frosting it tastes like you eating dessert. It definitely quashed my cinnamon roll craving the other day!

Ingredients

1/2 cup coconut oil (melted and then cooled)
1/2 cup maple syrup 
2 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt 
3 cups rolled oats
1 cup almonds
1 cup pumpkin seeds

 

Method

  1. Preheat oven to 275F
  2. Combine all ingredients and spread into an even layer on a parchment-lined baking sheet.
  3. Allow to bake for 1 hour before turning up the heat to 300F and allowing to cook for another half hour.
  4. Allow it to cool completely before breaking it up into chunks and storing it

 

It takes a little bit of time, but it’s pretty hands off so it perfect to do while your getting things done around the house or binge-watching the latest Netflix series!
