Spiralized Beets with Pesto

I was not the biggest fan of beets. Let’s make that clear. I do, however, love this recipe! This may be the only way I eat beets from now on.


2-3 lg Beets
1 cup Beet Greens
1 cup Other Greens
1 cup Walnuts
2-3 Cloves of Garlic
2-3 tbsp Oil of Choice
1 tsp Salt
1 tsp Mustard Powder
1 tsp Onion Powder


  1. Preheat oven to 425F.
  2. Place spiralized beets in an even layer on a parchment-lined baking sheet and bake for 10 minutes.
  3. Place remaining ingredients into a food processor or blender and combine. Add a little water if necessary.

Ummm yeah, that’s it!
