Green Romesco

Romesco is a roasted pepper sauce that you’ve probably seen somewhere in its usual red color. This one is green and done with poblanos and green bell pepper. It is definitely something you want to try out and would go perfectly with pasta, along with some roasted goodness or even just slathered in a piece of bread (yes I did quality testing for this and yes it was delicious!). This makes a decent batch so there will be plenty to go around.


1 lg Jalapenos
1 lg Green Bell Pepper
2-3 Cloves of Garlic
½ cup Sunflower Seeds
1 tbsp Vinegar
3 tbsp Oil
2-3 tsp Water
1 tsp Salt


  1. Preheat the oven to 400F
  2. Cut up the peppers and place them and the garlic on a parchment-lined baking sheet and sprinkle with a high heat oil.
  3. Bake the peppers and garlic for about 20 min.
  4. Add the peppers, garlic and the rest of the ingredients into a food processor and pulse until it comes together scraping down the sides and adding water as needed.
