Vegan Patty Melt

Ingredients

4 slices Gluten Free, Vegan Bread (Or whatever!)
4 slices Favorite Vegan Cheese Slices
2 Patties Beyond Meat Burgers
1 lg Yellow Onion
1 tbsp Balsamic Vinegar (optional*)
1 -2 tbsp Earth Balance (or other vegan butter)

Method

  1. Cut the onion in half and then slice each half. Add to a pan over medium and heat and, stirring occasionally, cook until caramelized. Once browned add in balsamic if choosing to do so. Cook another couple minutes and set aside.
  2. Cut beyond meat patties in half to form two smaller patties. Cook the patties and set aside.
  3. Butter the bread slices and assemble the sandwich:
    1. 1 slice of bread butter side down
    2. 1 slice of cheese
    3. 1 patty
    4. Half the caramelized onions
    5. 1 patty
    6. 1 slice of cheese
    7. 1 slice of bread buttered side facing up
  4. Gently brown the sandwiches over medium-low heat until heated through and the bread is golden brown.
