Panzanella

Ingredients

½ loaf GF V bread
1 large Tomato
1 large Bell Pepper
1 large Avocado
1 tsp Dijon Mustard
1 ½ tbsp Red Wine Vinegar
¼ cup Olive Oil
To taste Salt and Pepper

Method

  1. Cube the bread and bake at 400F for about 10 min or until golden brown. Let cool.
  2. While the bread is cooling combine the dijon mustard, red wine vinegar, olive oil and salt and pepper together to form and vinaigrette. Set aside.
  3. Cut the tomato, bell pepper and avocado into chunks.
  4. Combine the bread, avocado, tomato, bell pepper and vinaigrette in a large bowl.
