Jamaican Jerk Curry


2 cups Cubed
1 cup Butternut Squash Cubed
1 large Red Onion Sliced
16 oz Cannellini Beans
2 cups Kale Chopped
2 tbsp Jerk Seasoning
1 tbsp Olive Oil
2 cups Coconut milk
2 cups Veggie Broth
To taste Salt and Pepper


  1. Heat oil in a medium stock pot or a large saucepan.
  2. Add in onion, sweet potato, butternut squash and saute until the sweet potatoes are tender.
  3. Add in jerk seasoning and coat the veggies. Allow the spices to cook out for a minute or two.
  4. Add in the veggie broth, kale, and beans.
  5. Allow the beans to heat through and the kale to soften.
  6. Add in the coconut milk, heat up and serve.
