Sweet Potato Bun Sliders (Gluten Free & Vegan)

I don’t repeat a lot of dishes in my kitchen, but this one is going to be featured all of the time now! It was easy to put together, tasty and perfect for all the get-togethers that happen this time of year. These were gone in about 2 minutes flat so I hope you enjoy!


1 pkg Beyond Meat Burgers
2 Long, Thin Sweet Potatoes
1-2 tbsp Mustard
½ Med Onion, diced
½ cup Sauerkraut

*Makes 8 sliders*

**The sweet potatoes need to give you 16 slices**


  1. Preheat oven to 400F.
  2. Slice the sweet potatoes into about ½ inch thick slices and arrange on a parchment lined sheet tray (optional: drizzle with a little high heat oil and salt).
  3. Place in oven and bake for 10 min one side. Then remove from oven and flip. Bake for another 10 min on the other side.
  4. While the sweet potatoes are baking cut the patties into fourths. Roll each fourth into a ball and then flatten.
  5. Cook your mini patties over medium heat in a little oil if desired.
  6. Once the patties are browned on each side (about 2-3 min a side) remove from the pan and set aside.
  7. Add the onion to the pan and cook into just caramelized.
  8. Let the sweet potato buns cool just a bit and then assemble the sliders.

I assembled them in this order:

  • Sweet Potato Slice
  • Mustard
  • Onions
  • Patty
  • Sauerkraut
  • Sweet Potato Slice

These were so tasty and perfect for snacking on during a game or at a party!
