I’ve probably made this 100 times, no exaggeration, and it’s still to this day my most requested and most loved recipe. It started as a riff of Applebee’s spinach dip and turned into a really simple crowd-pleasing recipe perfect for a party, even if they all eat dairy. I especially love this recipe because it proves that you don’t need dairy to get a beautifully creamy, super delicious dip! The swaps for this are pretty easy and if you spend just a little more time, I’m talking 5 minutes total, on the beginning steps you won’t be disappointed!
*I used the leftovers to make a grilled cheese the other day and OH-MAH-GAH it was good. I spread a layer of the dip and topped it with chopped sun-dried tomatoes and a little balsamic reduction. Then cooked it like a grilled cheese [insert all the drool-y emojis]!
