I love pesto and I think it’s just a great way to add some extra nutrition to your meals. I actually came up with this recipe because I love to find ways to use overripe avocados. Avocados are expensive so I absolutely hate throwing them away, but eating an overripe avocado isn’t exactly enjoyable (and does not look great in an Instagram post ha!). So here we are! Another way to use overripe avocados that also makes a delicious oil-free, dairy-free, vegan pesto that also has some protein for those new year gains!
